Yields 10 guests

To make the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

Ingredients for the Cocktail (makes 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, to finish

Method

Making the Cordial: Put the listed components in a pot, heat until it reaches a simmer, mixing so the sugar melts. Then, turn off the stove allowing it to reach room temperature completely. Decant to a sterilised bottle, cap it and refrigerate it chilled, where it will keep for about one month.

For the Batch Mix: Combine every liquids into one large bottle, let it rest for an hour, then strain best through a fine cloth, making it completely strained.

When ready to serve: Add 85ml of the premix to a stirring glass containing ice, gently stirring carefully for about 60 seconds to chill. Pour into a frosted cocktail glass or similar, garnish with a few cranberries adding the final touch using a quick spritz with the mandarin essence above the glass.
